If you ever happen to step into any South Indian bakery I’m sure you will fall in love with this colorful cake. You can feel that juiciness at the first sight itself, after eating with your eyes, I’m again sure you’ll order one for your taste buds.
This cake, commonly called Honey cake, is supposed to have introduced by a famous South Indian bakery called ‘Iyengar Bakery’. But you can see it in all local bakeries there.
The whole concept is pretty simple. The basic sponge cake nicely soaked in honey and topped with jam syrup and desiccated coconut. So this is actually a easy to make cake. I realized it after referring one or two websites and immediately started to prepare it. After all, this used be in ‘Default buy’ list for me when I was a kid. The bakery that introduced this to me is ‘Pasumathi bakery’at my home town. So, this sure is nostalgic.
The cake finally turned out to be soooo good. What I couldn’t believe still was my husband’s reaction. Seriously!!! Because unlike me he is quite calm, less talking, lesser reacting, gentle and soft natured man. Whenever I serve him something with so much of excitement when a new recipe turn out to be so successful, his reaction usually is, “Good”, at the max. suddenly my excitement falls down with a steep. Yes, It took time for me to understand the fact that energy levels do differ from one another, and slowly I started not to expect any high energy response from him.
So, just like any other new dish, I served him this, once he was back from office today and was heading towards my baby. A sudden shock I should say, “Super ma. Awesome”, his voice. Suddenly my excitement raised to a peek. After a while, I realized and told myself, “how did I forget he is from the same place I grew up?” This was nostalgic to him too and so was the excitement.
Now, the recipe,
Serves : 8 to 10
Prep time : 20 mins
Baking time : 45 mins
For the Cake:
- All purpose Flour or Maida – 1 cup
- Powdered Sugar – 1 cup
- Butter – 100 gms
- Baking powder – 1/2 Table spoon
- Eggs -2
- Milk – 2 to 3 Table spoons
- Vanilla essence – 1/2 Table spoon
For the honey syrup:
- Honey – 1/2 cup
- Water – 1/2 cup
- Sugar – 1 Table spoon
For the Icing:
- Jam – 5 Table spoons
- Sugar – 2 Table spoons
- Desiccated Coconut
- Preheat oven to 160 degrees Celsius in convection mode.
- Sift flour, powdered sugar and baking powder in a mixing bowl. Mix them evenly.
- Add butter, eggs, milk and vanilla essence. All at once. And whisk them well to the below consistency.
- Pour the mix into an 8” greased cake pan. Bake for 45 mins
- Test it with a tooth pick for perfect bake and cool it.
- Add water, honey and sugar in a thick bottomed pan and make a syrup. This is for lightening the honey so that it can flow through the pores. This shouldn’t take more than 2 mins
- Add this warm honey syrup to the cooled cake using a spoon. Give it some time to get nicely soaked.
- Add Jam and sugar to a pan. Mix it in low heat till they both combine and start to leave bubbles.
- Spread this as an icing to the cake.
- Sprinkle Desiccated coconut as the final finishing. The juicy Honey cake is ready for your New year party.
- You can add a pinch of food color to the cake mix, since at the bakeries you see it in yellow or orange colors. But I did not add any color here.
- Some recipes say you should add a teaspoon of chilli powder to the Jam icing. I avoided it here.
- Did you notice? All the wet ingredients were added at once. This is because, we need our cake spongy yet firm not to lose form after drinking the honey syrup.
